A long time has passed since the man randomly discovered that the milk could turn into a cheese. Since then, the processing has always been the same on the farm: good quality milk, cage of animal origin and respect for times. Meeting the Casaro allows us to know the secrets of the calenification, to see the tools that have always been used and live closely the true path of milk. Tasteing the still hot cheese is a strong emotion. Waiting for the ricotta bows to be ready, we enjoy a walk through the vineyards, olive groves and family citrus groves. A few steps from the vineyard Federico II we arrive in the cellar and we will focus in the area dedicated to the winemaking, bottling and refinement of the wines: the guide will anticipate some curiosities about the wines that will be offered at the table the animal area to get to know the animals closely milk; Then we move to the lawn to explore aromatic plants, rare crops and centuries -old olive groves. Finally Zabbina is ready and here we discover a unique and authentic taste. The lunch will be served in one of the verandas or in the restaurant and includes different dishes that want to reflect the Sicilian tradition with a marked rural imprint. Everything will be accompanied by a versatile and captivating white and a red that recalls all the heat of the Mediterranean
